The sweetness of Shoumei white tea from Fuding, Fujian province, combined with the citrusy fragrance of tangerine. In these minicakes the strong mature leaves of an aged Shoumei from 2017 are pressed together with mature tangerines peels - chenpi – 陈皮 -  closed in a sweet embrace. 

Shoumei is a white tea made with older leaves and releases a warming taste with botanical and medicinal notes and a pleasant hint of sweetness that gets more intense with ageing. Here its comforting taste is enriched by the autumn flavours of tangerine fruits, vivid and pure, and perfectly balanced with the tea. 

Each minicake weighs about 6 gr., and can be infused as a whole.

Origin: Xinhui, Guangdong province
Flush: Spring 2017
Format: 100 gr. of tea (about 18/20 minicakes) in signature pack. 
Storage: this tea can be stored in its original package or in ceramic vases. Avoid heat, light, and moisture.

Infusion Parameters

EASTERN BREWING
Quantity: 
1 piece for each teapot
Rinse:
 before starting the infusion, rinse the tea with a very fast washing in order to let it rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
Brewing time: Begin with a 1 minute brew for the first infusion, and continue with a 40-second brew. Increase with each successive brew as needed. 
Water temperature: 90-95°C
Number of brews: 10-12


WESTERN BREWING
Quantity: 1 piece each 500 ml of water
Brewing time: 4-5 minutes
Water temperature: 90-95°C

COLD BREW
Quantity: 1 piece each 500 ml of water
Brewing: put the tea leaves in room temperature water and steep for 7-8 hours. Filter the liquor and drink within 24 hours.
